No you don't have to run ant every time you change anything. It's just when you need to regenerate webservice stubs and such (genereated code). Normally you only do it once and if you do 'ant clean'. Debugging works good in eclipse, ant is not part of the debugging. You run JBoss in eclipse and debug just fine.
