#483 land #447: feat(cli): add --quiet to doberman demo

Landing branch for [#447] by @blackcoderx, their commits are preserved and GitHub marks [#447] merged when this lands. Merged origin/main into their branch: CHANGELOG keeps their bullet as the first Unreleased entry; docs/CLI.md was restructured on main after they branched, so --quiet/-q is added to the doberman demo row and to the scriptable-flags sentence instead of the old table. One extra line: the --quiet help string was copied from scan and claimed all human output is suppressed, which isn't true for demo (the summary stays), so it now says so. demo() itself is untouched. Tests, ruff, and lint-imports green locally.
