After installing as admin on windows 7 64-bit and then uninstalling my PATH environment variable was overwritten as
C:\Program Files(x86)\Diffuse
whereas it should have been
%PATH%;C:\Program Files(x86)\Diffuse

What exactly did you do? I have installed/uninstalled several times (also 7 x64) and didn't encounter such problems. The external program used by installer/uninstaller to modify the path variable is extensively tested, so I would be surprised if it screwed up.
