Mark, I will develop a daemon to monitor the mail log and do some actions on the firewall, like Sam recomended. I will use rsyslogd's log to pipe feature and a python daemon (may be some MySql too). Blocking only user unknow error will not help me much, since most of the zombies are getting blocket on blacklists and spf erros, before they try to send the destination email. For now my only workarround was to use ps-watcher to restart esmtpd when I find something may be wrong. This is my ps-watcher.conf courieresmtpd entry. The sendmail line is optional and to advise me when it happened.
