You nailed it.

Is this documented somewhere and I'm just not seeing it?  If not,
maybe a change to the comments in the various authdaemon config files
are in order.

In conclusion, my maildroprc file is now simply:

--------------------------------------
logfile "/var/log/maildrop"

MAILDIR="$HOME/$DEFAULT"

# In authmysqlrc,
# $HOME = $MYSQL_HOME_FIELD
# $DEFAULT = $MYSQL_MAILDIR_FIELD

if (/^X-Spam-Status: Yes/)
{
to $MAILDIR/.Spam/
}
