We are developers of call center solutions, and, at this time we are searching an application in order to do speech translation from wav files to text. The language is Latin american Spanish. The files are typical voice mail files aprox 1 min length each.
I would like to kindly ask you, to point me in the right direction of the product I should review.

You can build such system with CMUSphinx, however you would need to invest some amount of effort in the development of a model of Latin American Spanish. This is doable though and you will get an open source solution as a result.
An alternative would be a commercial service.
