I am using Salix (a Slackware-based distro). When I click on a menu
(File, Edit, View, etc.) the menu appears, but as soon as I let go of a
button, it disappears, so I cannot select any item on the menu. Even if
I hold the mouse button down, and then release it over the sub-menu
item, it still just disappears.

It works for me on Debian Jessie. I have a couple questions for you:
1) What version of Java are you running? Modern versions (JDK7) of the Iced Tea open source JDK seem to work fine; otherwise, the Oracle version is a good idea.
2) What download are you trying to use? Slackware package, generic Unix / Linux package, or plain .jar file?
Commands:
wyatt@behemoth:~$ java -version
java version "1.7.0_65"
OpenJDK Runtime Environment (IcedTea 2.5.3) (7u71-2.5.3-2)
OpenJDK 64-Bit Server VM (build 24.65-b04, mixed mode)
If you have not been trying the .jar version so far, let's try again using that one. Likewise, you could try a different JDK version, especially if you are not using an Oracle version.
Cheers
