It is a fact that \'i is valid for producing “i with acute” (and the same for grave and dieresis) since the release of LaTeX2e. It's easy to check. Since the translation to \'\i is known to create problems with Biber, it should be changed or, at least, made changeable in preferences.

BibDesk translates unicode character "í" (Latin Small Letter I with Acute = U+00ED = í) into the following TeX seduence: {\'\i}
No, this is correct. The \i is an i without the dot, otherwise some tex versions will add the accent on top of the dot.
Well, pdflatex currently chokes on the "correct" conversion with "Package inputenc Error: Unicode char ́ (U+301) []" whereas {\'\i} works.
