OK, I think I've found my problem. I was previously using JBoss 3.2.2 RC4, when receiving the error below. I've since installed the production release of 3.2.2, and it seems to work. There must have been an anomoly in the JBOss class loader that was causing it. I got the example directory scanner to load a file, and it was processesd through the example pipeline.
