thank you for reporting this. The iterationCount command is an emacs-ish feature which was available in AlphaX and has not been ported to the new Alpha, so the documentation is just a bit out of date.
In replacement, there could be a menu command Add Items... (along with the already existing Add Item) that would prompt the user for the number of items. Anyway, the commands to enter an itemize or enumerate environment already ask this.
I'll correct the Latex Guide.
