I would ask that you update to OS X 10.6.2. There are some color profile fixes in that update.
Do you use any sort of monitor calibration?.

I am glad you were able to find something that worked.
Perhaps the best/easiest way to assign the large format printer driver is to delete the exiting printer and add a new one. When you get to the point of selecting a driver, use the "Select a driver to use..." section. Then you can scroll down to find the listing for "Generic PCL 6/PCL XL LF Printer - CUPS + Gutenprint 5.2.4"

I tried that and ended up filing a bug report with foomatic "http://bugzilla.linuxfoundation.org/show_bug.cgi?id=394". Over 50% of the generated PPDs showed they were large format printers. The first three I went to verify via the manufacturer's web site were not large format. That quickly ended that approach.

The Gestetner, Infotec, Lanier, and NRG printers are all part of the Ricoh family of printers. A check of the foomatic database show that the MP 5000 printers from all those manufacturers also support 11 x 17 (Tabloid) paper.

There can be several reasons for slow printing. One reason could be that the driver is using all of the available computer processing time. That is, the driver is processor bound.
Another reason could be if the driver puts the printer into an unexpected state as is mentioned as a possibility in the similar postings at...

The driver currently assigned to the Ricoh MP 5000 does not support Tabloid paper size. I would suggest that you try setting up the printer using the "Generic PCL 6/PCL XL LF Printer" driver. That driver does contain the larger paper sizes.

Use the web interface to the printing system. Go to [http://127.0.0.1:631/printers/][1]. Click on your printer, then use the button to set printer defaults. Set the options as you want them and click to save them as defaults.

You need to use the latest version of usbtb to avoid the system hanging during the installation process. Please use version 1.0.17 which is available from the [Gutenprint download page][1].
