I'm a little confused about the apparent disparity in versions between the downloadable release build which is 2.2 (released in 2013), and the code in the repository which appears to be 2.0 (last updated in 2011). Am I missing something super obvious here? I'm trying to get ahold of the latest source so I can modify and build it with a few extra features for a grocery store. Help would be gladly appreciated!

You need to look in the right place. Code in the repository is in https://sourceforge.net/p/posper/svn/HEAD/tree/trunk/
with the latest revision r1032dated 2013-05-29 which contains some major
refactoring while the latest functional enhancements are in r1027 dated
2013-05-13.
If you want to make changes you should always use the latest revision.
Also, this is not the latest development. You can subscribe to
posper.support.de where we publish latest snapshots from mostly
commercial developments (latest published snapshot is
posper-3.0rc-877-27 dated 2014-03-17). Note that release numbering is
different here (r877 is actually newer than r1027!).
This code will go into the SF repository eventually, at latest when we
officially publish 3.0.
