I have maps of surface pressures for a series of times, and I would like to convert them into sea-level pressures. Which NCO function would permit me to apply the same elevation correction for all times?

You can use ncap2 to apply an arbitrary adjustment to a field, e.g.,
ncap2 -s "psl-=1000" in.nc out.nc
