Actually you can't take out Zimbra's MTA. It's the only MTA that you know the path to your mailboxes and delivery inbound messages correctly. So your messages will arrive at mxHero and then mxHero will route it to your Zimbra MTA, which will finally deliver the message to Zimbra's mailbox.
The mxHero log file is really /opt/mxhero/engine/logs/mxhero.log. You can also see /var/log/mail.log which will bring mxHero's MTA information.
