SInce my KeePass is my go-to app regarding all my credentialing, sometimes the 'Notes' area for individuals get quite detailed and length. Would there be an easy way to make the 'Entry" window resizable via the regular right-bottom corner of it mouse strechable to any size desired? I use a plug-in called "KeePassEnhancedEntryView" but editing and copying information from that side bar is cumbersome.

The entry dialog deliberately is not resizable. For details, see
