I have tested DAV mail with outlook and thunderbird. Folder subscribe and unsubscribe do not work with either. This feature is highly desired as my server has a public area with many folders.
You are right, folder subscription is not really needed for user mailbox support, but will become mandatory with public folders.
Still not implemented, would need to find a place to store subscribed folders
