I am new to the Wiimote and to XCode. I would to see a minimal piece of sample code to interact with the IR. Past that, has anyone ever looked at flashing patterns for object identification?

As minimal example you could take a look at the DarwiiMote code which has a nice implementation. Hopefully you have ever programmed objective-c ones, as the code heavily rely on this. It's a quite a steep learing curve but worth it :-).

Not sure whether the IR camera is able to detect rapid flashing patterns, but it is worth a try :-)
