Thank you all for your assistance!
thank you rayzer and pepdebian. I did what you two recommended. I am still not able to type Japanese, but I am getting close since there is indication of it. Please see my screenshot. There is probably one more thing I need to activate - please advise.

Thank you cavy and pepdebian for the tips! pepdebian - I've went so far and installed iBus and iBus-anthy. Restarted the computer and then went into Settings --> iBus Preferences. Then it says, "The iBus daemon isn't running, do you want to start it?" I click 'YES'. Then I see the iBus Preferences window in which I can see the Input Method tab. I added "Anthy", "Japanese", and "Japanese (Kana)". Configure the keyboard input switcher keys, etc. then tried to type Japanese, but it's still not working....
I'm trying to install another language and keyboard layout for my Peppermint OS. However, I'm not able to find the language setting. Older versions of Peppermint OS had this but in the latest version, it's nowhere to be found. Can someone please tell me how I can enable it? I want to be able to install Japanese language and its keyboard input. Thanks.
