With the latest AirPods we experience nearly identical accuracy between wired and Bluetooth.

I think what @Nickolay said above is that the software doesn't care if your language is English or Mandarin or Marsian. It's just an engine. Whatever you train it to recognize -- it will. Caution: what you're trying to do will take you a very long time and require extensive investment, not a weekend project.
