I've been using Truecrypt and Vercrypt for a really, really long time and haven't had much problem with it losing files. I have had to run checkdisk a couple of times but there was no major loss of data.
OK it's been a while. I had the same dropping error on two different drives. I swapped the power cable that was feeding the drive and I've had no more problems. My apologies for jumping the gun. It was just an odd sequence of events that this happened now after years of no problems.

Veracrypt container of a fixed size irrespective of its content? Yes
Look at the top header option favories. You mount the ones you want mounted and then drop down the favorites option and select "add mounted volumne to favorites" I think this is how you do this. I used to do it in Truecrypt and this should be the same. You can even edit them after you make them a favorite by using the "organize favorite volumnes". You can change the names and I think the order they are mounted. They physical drives and cable connections do have to be in the same place every time...

This is a shot in the dark but it may be the same problem I had while installing Linux to a drive. I had set up my motherboard to boot a certain drive first "HD2". It was NOT the natural first boot. The actual connection. The first "natural" connection/boot would be named on the board HD0. When Linux installed it didn't install to the drive I selected , even though it showed it as going to another drive, it installed to drive HD2 which was my windows system drive. Example. I have drive HD0 HD1 HD2...
