The docker container is not maintained by corrados. Feel free to submit an issue or pull request to https://github.com/grundic/jamulus-docker -- that would be much more visible, instead of mentioning it here :)

I can highly recommend Loopback for Mac users: it's a virtual mixer, letting you do all kind of things: VST, microphone, sound module, etc. This lets me turn on/off my mic with click of a butting instead of switching devices in Jamulus, which is much more practical and simpler.
