GUI and feature improvements would be welcome, but not Qt. Native GUIs use native widget conventions and features, are quicker, don't bundle in Qt's 20MB of baggage.

The warning message is scary and cryptic. It should at least link to the help file to explain the potential issues. But I don't think the logic behind it is necessarily relevant to some/most users. Wouldn't it make more sense for VeraCrypt to watch for shutdowns or restarts, then act as needed, like dismount volumes?
Would indeed be nice. Also, why not expose the option in the archive creation GUI?
Could you add to 7zip a way to customize the files order? One big reason is to be able to quickly extract/view certain files in a solid archive, like text files. WinRAR has this: https://documentation.help/WinRAR/HELPRARFILESLST.htm

The reasoning isn't application-specific. Global hotkeys are a limited resource and can conflict with app-specific hotkeys, so all the better if they can be avoided. I'm anyway using "Always show global auto-type entry selection dialog", so an extra key in that dialog is both useful, and harmless to those who don't need it.
