Nowadays best standard charset for international usage
is UTF-8.
But then the special characters don't mean anything to
us anymore.
So, it would be great if phpmyadmin would have the
option to choose your own view character set. (similar
like the option Notepad++ has.
So view as UTF-8 (default) or ANSI
Now phpmyadmin forces this in html headers.

For table data input fields I would like to have the same
option. So enter the data in e.g. ANSI or latin1, but store
in the database fields using the collation setting.

For example we enter in Ansi
Santé Änderung

Then the database would contain:
Sant顄nderung

    I don't understand this at all. You want to get rid of
    charset header? Thats unacceptable, because translations
    need that header to display correctly.
