Pros: HTTP Toolkit makes it easy to intercept traffic even in complicated cases, like Docker, Android and command-line/backend software. The UI looks good (much nicer than older alternatives like Fiddler, Burp and Charles) and the UX is clear. I really like that it's all open source so you can see how it works.
Cons: Not quite as feature filled as older tools like Fiddler/Burp/Charles, but rapidly improving and it's possible to contribute to help move things forwards.
Overall: HTTP Toolkit is great alternative to other HTTP debugging proxies that's open source, and focused on quick interception so you can easily see and modify the traffic you're interested in.
