Bump version to 2.1.1, improve CSV import handling
Update version to 2.1.1 across project files, UI, and docs. Document and clarify CSV import fixes: quoted commas and embedded quotes are now handled per RFC 4180, spurious trailing fields removed, leading whitespace before quotes supported, and numeric inference uses InvariantCulture. Update changelog and version history accordingly.
2.1.1_Fixed - Kept as same version only because I forgot to commit these changes before Release.
Fixed top Status box not auto-scrolling.
