There are Zabbix setups with more that 100K of hosts (millions of metrics and triggers) monitored by a single Zabbix Server. You may check presentations from Zabbix to get some references. Information from 2012 does not represent current state of Zabbix abilities.

Evan, I think it's worth to communicate directly to Zabbix Company in order to get a valuable official advice on possible solutions for your specific case.
