The wikipedia pages on Text mining and Natural language processing are very good starting points.

You can find a brief overview about some text mining techniques is in this paper while textanalysis.info offers a regularly updated collection of links on text analysis and related topics.

These are some already published books on this topic that I found very useful:

Manu Konchady, "Text Mining Application Programming", Charles River Media; 1st edition (May 4, 2006)

Manu Konchady, "Building Search Applications", Mustru Publishing; 1st edition (June 2008)

Haralambos Marmanis and Dmitry Babenko, "Algorithms of the Intelligent Web", Manning Publications (June 28, 2009)

Michael J. A. Berry and Jacob Kogan, "Text Mining: Applications and Theory", Wiley (May 17, 2010)

While there is this upcoming book, that looks very promising:

Grant S. Ingersoll and Thomas S. Morton, "Taming Text", Manning Publications (exp. Summer 2010)
