You can change the way VuFind analyzes text by changing its Solr schema, found in solr/biblio/conf/schema.xml. Some information on dealing with Chinese characters can be found here:
Note that the next release of VuFind (due out in a couple of weeks) will upgrade Solr from v1.4 to v3.5, which will allow access to the new SmartChineseWordTokenFilterFactory if you need it (though you'll have to install some extra library files to get it working).
If all of this Solr stuff is new to you and you need more detailed explanations of how it all works, just let me know and I'll be happy to elaborate. You might also want to try getting in touch with the solr-user mailing list (see http://lucene.apache.org/solr/mailing_lists.html), since this is more of a general Solr issue than a VuFind-specific problem, and there may be more expertise available there.
