I fixed it. I was wrong about the error that I was getting from Eclipse. It said "cannot open display:" without the ":0.0" which meant that my DISPLAY environment variable wasn't being set (unlike in my shell profile in Terminal). Thus, in the Eclipse Run configuration, I clicked the Environment tab and added the DISPLAY=:0.0 environment variable. Now, I can run vpython programs from Eclipse on a Mac, and I am one happy guy.
