In the Viking Preferences dialogue, Export/External tab, what should I put into the GPX Creator field? I found an actual GPX Creator app but it was rather old and was only a featureless GPX editor. Can anyone suggest an alternative?

When it's blank, Viking will automatically put in a suitable value, something like "Viking 1.7 -- http://viking.sf.net/", when exporting to a GPX file.
Since it puts in the version value, the string is not fixed.
Potentially other programs/services may use the Creator field for special purposes on processing a GPX file, e.g. see https://developers.strava.com/docs/uploads/ and the 'Device and elevation data' section.
Hence you can override the default value and adjust it for specific needs.

Leave it blank unless you have specific reason to change it.
This is the text written in the Creator XML field in GPX files:
https://www.topografix.com/GPX/1/1/gpx.xsd
