There is a localization project for VietOCR at https://www.transifex.com/projects/p/vietocr/. The Czech translation is nearly complete. You can register and start a translation for German.

I probably have misread your question. If you want to OCR those two languages simultaneously, you can type ces+deu in the OCR Language editable combobox.

For example: Czech, German (contains umlauts)
