The program analyzes the disk, starts the defragmentation, but NEVER ends the work. I need to restart it several times. The disk has plenty of free space for the job. The version is 0.7.2, my system is Windows 7, Service Pack 1, 64 bit ... What can be happening? How do I make UltraDefrag force unmount the volume or take ownership of it? It simply stops after a few minutes!

The program might fail to do the job as it still has a few bugs. You have to wait for the new release and hope it will fix the problem for you. I have no idea when the next release will be made, maybe next month or maybe next year, who knows, so you have to use something else meanwhile I guess. Personally I don't like other disk defragmenters, but if I'd have no alternative I'd use one of them for a while.
