I am not very familiar with xmltv. I was able to successfully install it and load 10 days of data. Then I loaded the data into TVG (although it took a couple tries -- the first time I got a null object reference error). Now, I have ten days of data in TVG. What is the recommended usage going forward? What, exactly, happens when I click the "Run XMLTV" button? My guess is that it overwrites the existing data with (in my case) another ten days of data, and then I use "Load Listings" to load the file? Is that correct? Thanks

Essentially, yes.
I also recommend setting "Load Default listings on startup" to "true". This will make TVG automatically load your listings file every time it starts.
The null reference error you mentioned, this error would have been logged to TVG's error log which is a file called "Exceptions.xml". Could you send me this file? It's located in the same directory TVG was installed to (default \Program Files\TVG).
