Is there a way to rest to 0 or just edit the manual ordering field in the task, so I can have a fresh star in for manual ordering every time I need to? I could't find it. Even editing the task, that field is not there.
I normally sort task for criteria as due date and priority, but, sometimes I also order some task manually, just to put them on top. The issue I'm experiencing is that the manual order is stored in the field "Manual Ordering", so, every time I activate the manually sort option, each task has an old order number, and if enough task are in that situation, the result is quite chaotic. I just want to get the task order by due date and priority, and then move some particular task to the top manually.

Sorry that's currently the behaviour.
You cannot "force reset" the manual ordering, sorry.
