thanks for your interest in SuperTuxKart. We do not have any complete manual online, the help on how to play is mostly located in-game. On the main menu, at the bottom, there are "Help" and "Tutorial" buttons that contain the currently available documentation. We aware that these are not perfect though and are constantly working to improve them; meanwhile if you have questions that are not covered by the in-game help, feel free to ask us. For instance, it's good you mentioned looking back, as indeed this was poorly covered in in-game help (but will be better explained in the next version). The default key to look back is to press the "b" button of the keyboard. If the key bindings were modified, or a keyboard is not used, you can view the key bindings from the options menu (also located at the bottom of the main menu). Shooting backwards simply involves pressing the fire button (spacebar by default) while looking back.

I work with a research group of the McGill University who has developed a computer simulator for handicap people.  Your program is used within a clinical study where the goal is to test the validity of this simulator.  I have to write a user manual explaining how to use your game.  I am not sure about some details of the game use (e.g. how to look backward and throw things in that direction).  Could you tell me where I can find these instructions?  I cannot seem to be able to find them on internet.
