#1 Proxy at localhost?

I haven't played around with StandBayeMail yet, but I will be soon!
I had a question from reading the web page - you indicate that the
proxy host must be "localhost". Is this really the case? I assume if I
choose to run this somewhere else I can and would just configure
my email client to that address instead of localhost. If the proxy is
running on a box with multiple network interfaces, which is chosen?
