The syntax highlighting is provided by the syntax.jar plugin.
To enable go to Plugins => Summary and ensure, that the checkbox "Load
at startup" is checked for the syntax plugin. If you change the
checkbox, please restart SQuirreL. But i think, you have already done
this steps.
If you have still troubles, please have a look at the log file (There is
a folder called .squirrel-sql in your home directory which contains the
log directory).
