Taxes are recalculated when you press "Update Form" To override the amount you change the amount before you post. Of course the total displayed is incorrect but it will be stored correctly. There was a bug in 1.8.0 where only the first tax was recalled. Thus you had to press "Update Form" to recalculate the form. There is patch on the download page which fixes that.
