I have not used sql-ledger yet (I have been trying since ver. 1.2.9 but have not
succeeded to make it work!!!!), but as Accountant I would guess

COGS = Cost of Goods Sold
CR = Credit
DR = Debit

For Service and GIFI I would leave for Americans/Canadians to answer !
