For service delivery, pre-payment is a great way not to get left holding the bill after delivering the work. We create an invoice with just the payment which is used for tracking the credit. Then as work is invoiced, we use apply a negative amount to this tracking invoice (I think this is handled via the Cash Payments screen but I don't have to do the book-keeping anymore these days :).
