Well, we're nowhere near that size, but SL works for any company of 1+ employees. Set up your services and normal expenses as inventory items, create projects for each client/project, use the timecard capabilities, and go to town. SL will generate invoices for you, add them to A/R when posted, and handle the A/P and G/L functions, too. There's no payroll (as far as I know), and many companies contract that to a dedicated payroll firm or have their accountant handle it. Go set up SL and ask your questions here.
