Have you try looking into Postgres' point-in-time recovery? I believe Postgres by default turn on transaction logging so you may just want to look into this topic for sure. Typically, that's done by restoring the last full backup, and then start rolling forward the logs since the last full backup until the point just prior to the invoice was deleted. So just one invoice?
