This may be bit late, but I just stumbled upon it this morning.
AurigaDoc is a java-xml-xsl based documentation tool for writing xml
documents and converting them to other open formats like HTML(single and
multi page), DHTML, PDF, PostScript, Formatting Object(FO), RTF, Java
Help and HTML Help(.chm)

I haven't used it yet, but the examples look good.
The source files are XML and you write content using subset of XHTML.
The problem I've found with DocBook is that not many ppl know it.
