    I am a high school Physics and Math teacher and am interested in
    using Speed Dreams to teach my students how to interpret
    distance-time, velocity-time, and acceleration-time graphs.

    Does anyone know how to make the game report time, distance, velocity, and
    acceleration in a format to be imported to an Excel file?

    Welcome to Speed Dreams, we are proud you found it interesting for your teaching work :-)

    As for this "telemetry" feature, we don't have fully up-and-running things, but if you are able to build the game from sources and know some C/C++ programming you could well make some quick tests by making some simple changes to the code.
