in the documentation it is stated, that the JBoss bloodline is only supported up to JBoss 7.1.1.
Should i try deploying SignServer 3.7 (community edt) on WildFly 10, or am i better off using JBoss 7?

JBoss AS 7.1 (or EAP 6) is the latest JBoss version that we have tested SignServer 3.7.0 CE on.
That being said later versions of SignServer (i.e 3.7.4 EE) has been tested on WildFly 9 and maybe WildFly 10 at some point.
The instructions for how to configure WildFly is slightly different. See https://jira.primekey.se/browse/DSS-732, DSS-1159 and DSS-1203.
You can also find some WildFly (possible even 10) instructions in the installation guide for EJBCA that should be quite similar to what is needed for SignServer: https://ejbca.org
But the easiest would be to go with 7.1.
