Unable to create a ticket, so asking in here. Has the support for ClamAV on SheepDip been finalised? Looking into the possibility of using SheepDip within my establishment as a project and would ideally like to run it with Symantec and ClamAV

The true answer is that I can't remember, but I'll check when I'm next in the office. I'm in Wales at the moment, on a language course, then I'll be back in England next week. The development work with ClamAV was done on a VM on a portable workstation without a net connection - and it's locked away so I can't check it from here. Are you OK to wait a few days for an answer?
On the other hand, you could try running the installer on a disposable VM and having a look at the modules which it extracts. Best of luck!

I've fired-up the development machine, as promised, and can now see that there isn't yet a module for ClamAV. We did some preliminary work a couple of years ago, installing ClamAV on a VM and studying the way in which it logs things. Our conclusion at that time was that it should be possible to write a module if there was a demand for supporting this particular AV product.
If you are seriously interested in using ClamAV then there's no reason why a module can't be written for it. Which particular SheepDip did you have in mind? Physical, network, or both?
