Why doesn't 7z have a way to exclude files/directories from the GUI?

When I right click on a file/directory, navigate to 7-Zip > Add to archive and get presented with a dialogue to give me options as to how I want the file(s) compressed, why is there no way to say what subgroup of files I want compressed?

There's a Parameters line, but apparently, it doesn't recognized the -x paramter. Why is it there if not to be used as a catch all for all the parameters that are not expressed in the rest of the dialogue?
