The old kernel package is'nt removed on update but the new package is merely added and made the default for booting. You may choose the old kernel on every boot by hand. You can change this default by editing the file /boot/grub/menu.lst (there is certainly a GUI in Ubuntu for this purpose but I don't know it from the top of my head - I always edit this by hand).
