Could you please elaborate a bit what you do? Do other games save well? Also please provide your scummvm.ini file

Can you please confirm you have a "lib" folder within your ScummVM folder on your GP2XWiz, if you lack the shared libraries in the "lib" folder you will lack saving and OGG Vorbis support. These libraries are shipped with the release so I would suggest you re-download and try again.

Should the issue still occur can you provide a lot more information and the scummvmrc file from your SD/game/scummvm folder.
