If look at the Makefile, you will see that SBackup installs these files:
/usr/sbin/sbackupd
/usr/sbin/simple-backup-config
/usr/sbin/simple-restore-gnome
/usr/sbin/srestore.py
/usr/sbin/upgrade_backups.py
/usr/share/sbackup/simple-backup-config.glade
/usr/share/sbackup/sbackup-conf.png
/usr/share/sbackup/sbackup-restore.png
/usr/share/sbackup/simple-restore.glade
/usr/share/applications/sbackup.desktop
/usr/share/applications/srestore.desktop
/etc/sbackup.conf
Erasing them will fully uninstall SBackup. I will add an uninstall target in later versions.

If you want to stop regular backup runs then deleting /etc/cron.d/sbackup will do that.
I installed it with make install as said in the readme file. I haven't set up any regular backup tasks.
